I made the tastiest, simple Bon Appétit recipe this weekend that I just typed up for a colleague.
Scrambled Eggs with Smoked Salmon and Lemon Cream
2 servings
2 tbsp sour cream
¾ tsp fresh lemon juice
¼ tsp finely grated lemon zest
¼ tsp chopped fresh thyme
4 large eggs
1 tbsp butter
1 large green onion, thinly sliced
2 oz thinly sliced smoked salmon (preferably wild, from Alaska)
—Mix sour cream, lemon juice, lemon zest, and thyme in small bowl. Season lemon cream to taste with salt and pepper.
—Whisk eggs in medium bowl to blend; sprinkle with salt and pepper. Melt butter in medium nonstick skillet over medium heat. Add green onion and sauté 1 minute. Add eggs; cook until almost set, stirring often, about 1 minute.
—Divide scrambled eggs between plates. Top eggs with salmon; drizzle with lemon cream and serve.
It was yummy, and so easy.
But I think I would revert to my first trip to Arizona/New Mexico (a family trip in 6th grade) and suggest doing a loop that would involve Flagstaff (cute town), Sedona/Red Rock country, Jerome (ghostown), and Montezuma's Castle (cliff dwelling). If you pass through Williams, you must have the pie at the Pine Country restaurant (facing the train station with the trains that take you to the Grand Canyon).

This is kind of what I'd suggest. Remember that driving distances out west are longer than the east, so like a Grand Canyon to Phoenix trip is five hours.

Yeah -- we went from Phoenix to Sedona in a day trip, but didn't really spend much time before we turned around! The drive was cool, though (in a terrifying-to-me way).
This is all totally hypothetical at this point, and maybe we'll go to Ireland or Germany, anyway! I enjoy imagining vacations.

Yeah, I might be a few states away, but I'm with you. Got my Fed refund and my Colorado refund. As much as I would love my California refund, I'm trying not to even think about it.
I still have to file. I've got three W2s and another form for some other money I got this year that I have to remember to bring into work so I can stay late one day and file from my computer here (free software available from the company). It's not like I'll be getting a refund--if I'm lucky, I'll be pretty close to breaking even.
Lunch today was flank steak, mashed potatoes, and peas from the cafeteria, with an orange for dessert. That orange was so juicy and sweet and yummy that I'm tempted to go back to the cafeteria for another one.
