I can't stand buffet brunches- my parents love them though. Breakfast foods do not do well in chafing dishes and I have to say I am not a fan of the make your own omelette. Too much egg and the filling choices always seem to pretty bleh IME. When in these situations, I tend to suck back bloody marys and try to choke down some bacon and breakfast potatoes.
For me, brunch out is a kind of fancy but relaxed affair (a la Zazie's). Brunch in is coffee, juice, mimosas, bagels, salmon, and maybe a spanish tortilla.
I can't really wrap my head around a buffet-style brunch.
I think almost every brunch I've been to in a restaurant has been a buffet. Though this my say more about the sophistication of my dining choices than brunch.
Brunch this year for Easter was very breakfasty -- quiche , salmon and bagles -- and people brought salads, croissants, and baked french toast. However, breakfast is my favorite meal -- I was happy.
there was also lots of coffee and various kinds of juice and fruit pulp to mix with champagne.

We have a few very nice buffet-style brunch options, but the best brunch in town is the Sundy House. [link] Seriously yummy. The place is gorgeous too.
I've been to some very good buffets, but , in general, buffets are filled with mediocre food. The Best breckfast buffets are small, so that everything stays fresh and hot and not overcooked or soggy
I don't mind buffets as long as they are well done. I like organization, lots of options, wide aisles and fresh food. Soggy, poorly reheated food is nobody's friend. Neither are huge lines, empty chaffing dishes and lack of table busing.
I'm willing to overlook shortcomings if the entertainment is good, and if there are free mimosas or other alcohol.
I'm not sure I've ever been to a breakfast buffet that wasn't in a hotel. (And therefore serving hotel food and therefore almost universally pretty crappy.)

However , I wouldn't get to touch most of the food, because I can't eat that much. It would make me sad.
