I also love their cover of "Romeo and Juliet", but I am not sure I could say it is better than Dire Straits.
I don't think I've ever heard their cover. And now I'm sitting at my desk misting up and getting weepy just thinking about the original. That right there is a song, I tell you what.

The originals are awesome, but Camper Van Beethoven's versions of "Interstellar Overdrive" and "Pictures of Matchstick Men" are definitive.
Eric Clapton's acoustic version of Layla is amazing (does that count?).
I adore the Drive-By-Truckers' version of Like a Rolling Stone, a song I didn't like in the original.
