The originals are awesome, but Camper Van Beethoven's versions of "Interstellar Overdrive" and "Pictures of Matchstick Men" are definitive.
Eric Clapton's acoustic version of Layla is amazing (does that count?).
I adore the Drive-By-Truckers' version of Like a Rolling Stone, a song I didn't like in the original.
Judy Collins's cover of Masters of War.
I'll always prefer CSNY's cover of "Woodstock" to Joni's, which is saying a lot for me.
