I'm seriously considering breaking it off with Blackwall and romancing Iron Bull, but I'm afraid how that would effect the storyline.
I don't think it would change that much, but I don't know. I'm deliberately playing a jerky Inquisitor who loves being worshipped right now, and Blackwall blew me off. I wasn't going to be a romance possibility for him anyway, but he is just really mad at me for my big ego and won't even give me information.

I got an inordinate amount of joy in my Inquisitor getting to
play the part of Mal in "Shindig"
(sort of) so I'm sure that colored my perception, somewhat.
I will say, and this has been the constant problem with Bioware romances, is they don't have much effect on the game once the wooing portion of the romance is over. Josephine called my Inquisitor by affectionate names in a couple of non-romance cut scenes, and I could invite her to go make out with me in the garden, but that was about it. Though I did get an amusing little cutscene with Dorian about it, as well.
Will began that quest and immediately said,
"I'm alright." Skipped great and good.
I do wish there was more to do after the wooing was done. Iron Bull certainly gives you more to work with than Josephine seems to, but I agree that it would be nice for it to have a longer-lasting impact on the game.

I wonder if the companion romances feel like they have more to them because you can travel with the person. I think it would be interesting to find out how Josephine's romance compared to Cullen's.

This is definitely part of it. Varric started pressing Iron Bull for details about our assignations, which he refused to give. Party banter is definitely one of the highlights of the game for me.
