My main childhood food memory: when I would get a good report card, my parents would take me where ever I wanted for dinner. For many years, that was fast food, because we didn't have it often. When I was like 12, I decided I wanted to go to a super-fancy Boston restaurant. Hey, the deal was, I got to pick! So I ordered all the fancy stuff -- escargot, steak au poivre -- and hated ALL OF IT. Oops.
But if you have food texture issues, the difference between gravy and puddings is not that great. If the TEXTURE is actually the issue more than the taste. I'm saying this as a person with gooey food texture issues. I don't like foods with a lot of gravy (i.e. most chinese food) because it's too gooey and pudding like.
OMG now I want salty white gravy on toast! That is not bedtime food! ok, for me, no food is bedtime food, but that requires work. bad ya'll
But gravy IS gooey. It's thick and pastey in the way a bad pudding can be.
That's, in my book, bad gravy. It might be good sauce, but it's bad gravy. Gravy is meat juice, not meat custard.

Gravy is meat juice + cornstarch or flour to thicken. It should be noted paste can be made with flour or cornstarch.
Meat juice = yummy au jus.
