I thought they were comparing it to Mercedes's weight, not her skin color, especially since she and Quinn have addressed that before. (I might have missed some dialogue, I was vaguely distracted in parts of the show.)

Well, that would make more sense. I'll have to go back and rewatch - I wasn't paying full attention the whole time, either.

There seemed to be an emphasis on the word "fat" in the dialogue. But then later, when Mercedes and Quinn were talking Quinn flat out said she wasn't trying to compare it to being black. At least, that's what I got out of it.
