Plei's stuff is amazing. And I had a line from SA's as my tagline for a long time, until just tonight. And I may go back to it because I love it so very much.
Holli's is crack, pure crack, but oh, so wonderful. Perfect voices. Perfect. mely's is amazing.
But I reallyreally love Cartography and its prequel and especially sequel. They re part of my personal canon. Which contains a few odd and peculiar things. But they are wonderful stories. Cass chose well.

Breach by hesychasm. "Sam sees dead people in New Orleans and tries to break Dean's contract." Spoilery for the end of S2.
Breathe On, Sister by vee_fic. "An action scene. A mission statement. A sudden opportunity. Just something you do." I'm a sucker for our Big Damn Heroes.
The Boys of Summer by ignipes. Sam almost, but not quite, forgets that Dean loves baseball.
The Boys of Summer [Hot Corner Rag] by musesfool. Remix of the above from Dean's POV, just as good if not better.
Listing of fic and picspams by kroki_refur. Her Ten Expressions picspams are intensely hilarious, and her fic is flailworthy. I won't list them all, but I definitely point out A Fifth of Comfort, Blood and Wine Are Red, Messing Around With Slim, and Make Do and Mend. But really, they're all good.
Fic listing by big_pink, whom I will rec to anyone who will stand still long enough. Cass mentioned Verbal, which is awesome. I'll chime in to mention Abracapocus (hysterical), Cirque de Celine (sounds like crack, but really, really not), Old Rebel Yeller (this fic hit me where I live in about six different ways), and Red (one of the best stories in the fandom, no questions, clear your calendar for this one cause it's a doozy).
Be aware that Big Pink sometimes likes to whump on John, and it can be a little difficult to take. Her characterisation of the brothers is usually dead on, though. I enthusiastically second Ailleann's opinions of Old Rebel Yeller and Red. Red is amazing.
Refur is like unto a goddess. No, really. You'll die either of bitter angst or laughing.
I like the baseball ones, in spite of my antipathy for baseball.
Breathe On, Sister--um. The most immediate story I may have ever read. It was more like being there than reading.
I know you said no wincest, but if you were ever going to make an exception, Bad Blood is very much in character, hysterically funny, and hot as molten glass.
For the Heavy Hearts of Soldiers, pre-series, John. A good character study and backstory, plus a how-they-met.
Don't Look Back. The little girl from Home grows up and follows in the Winchesters' footsteps.
Holy Water. Again, part of my personal canon.
Gimme Shelter. An AU where CPS takes the kids from John. A harrowing revelation why, despite his unorthodox parenting choices, they were better off with him.
On the Banks of the Tiber and its sequel, Field of Mars (linked on the page). AU fantasy. Dark fairytale, mythic and atavistic and did I say dark?
Interested in crossovers? Sometimes they can illuminate a new fandom by casting a familiar light.
Kings of the Highway, SPN/Drive.
And there's Vaznetti's 10 chapter Firefly/SPN, that starts with Zoe seeing something strange as she passes a graveyard.
There's at least one about the bracelets the boys wear, and a couple about Dean's amulet. But these should keep you happy for awhile.
Because really, I can't shut up about it, I forgot to mention that until canon tells me otherwise, Big Pink's Dazzleland is how Sam left for Stanford.
