In what areas could I improve for the next year. I've already said time-management and organization. I can't think of anything else that's acceptable (I highly doubt they want me to list my desire to lose 30 lbs.), and I know I'm not THAT perfect.

why don't you pick at least one area you are already good in, and make a goal of developing that talent/knowledge/ability even further. during my last eval boss-lady told me her goals for me was that I would keep up the good work in a couple areas - one to set an example for others who were weaker in that. she really only had one goal for me that had anything to do with improving on something I was not doing well.
