If rose cordial is something you eat, doesn't it need to be made from roses that you know are organic? (As opposed to any random rose you come across.)

Ideally you choose homegrown roses that have never been sprayed, as opposed to a bunch from the supermarket. Fortunately for this recipe I hardly ever use any sort of yard chemical, so I just rinsed the petals. Turned the water a lvoely pink, btw.

I think they may have stopped blooming because I wasn't deadheading or anything. I still have the plants, I don't know that I have usable flowers.

Though I might not notice if someone was eating my roses. I've only seen opossums on my street, but I've seen deer not too far away.
