"Lapsed" would fit that description, but that's not what you're looking for. I wonder if there is a term for what I think you're describing. If there isn't, there should be.

I always used to think that's what agnostic meant, but lately it doesn't seem to be used that way.

The best I can think of is "Non-practicing (enter belief of choice here)". Probably not what you are looking for though.
