Vonnie and Maayan can probably point you in a good direction as well. Maayan's fallen into the fic hook line and sinker, and has written at least one story already.

I've been more into the show itself than fic, but if you're just starting out, I'd recommend starting with Rheanna's stories, The Midas Syndrome, and *especially* Rose in December. They are both based on early show canon, so you don't need to know too much about the mythology. They are both very gen, almost episode-like in their structure, with wonderful characterizations for everyone, specially Jack.
I'd start with Destina's rec page, in which she's got a nice mix of slash and gen. (Anna's page is good, but a lot of her links are broken.)There are a few recent stories I loved, but they are mostly based on Daniel's ascension/Full Circle/speculation about his return and I'm not sure how much of that you've seen.

Vonnie--I've only seen about 10 or so episodes all the way through, the only ones I know I've seen in the right order are the ones from Monday and then the past two Saturdays on syndication.
The library has the Stargate dvds so I'm checking them out as I can. Currently I have out Season 2 Vol 4. I wasn't going to check it out, but it was there 2 days in a row so I took that as a sign. I have the Season 1 Vol 1 on request.

Ok, I got back from the theater today after catching a matineƩ of X2, the fine X-Men sequel. Definitely thought about how a Buffy crossover would work. All sorts of interesting possibilities, at least from where I'm seeing.
