Does anyone have a good recipe for vegan cookies/brownies/other baked goods? My hairdresser is vegan, and therefore misses out on partaking of a lot of the baked gifts that other salon patrons bring in as holiday gifts.

Anne, I have made vegan chocolate chip cookies using my usual recipe but substituting all vegetable margarine (I think I used a canola based one to be sure), egg replacer and making sure the chocolate chips had no dairy. The egg replacer makes them a little crunchier than usual but they were still chocolatey goodness.

I have had vegan peaunut butter balls in the past that were to die for, but unfortunately, I don't have the recipe.

I've been doing baked goods sans recipe recently. It's actually worked pretty well, but I've been baking for a long time, so I may just have a good feel for it.

Chili: Sautee onions, add garlic, add beef and brown. Drain. Add a shitload of tomatoes, beans, V-8 is great if you need to make it more liquidy, other veggies if you want. Chili powder, any other spices that strike your fancy - cumin is good, cinnamon can be nice. Other things I've added with success - bulgar wheat (great in vegetarian chili), corn, especially the big white hominy corn, really anything you have around can work.

I am a pretty good baker and often improvise. (One time I was making cookies and realized I had no eggs, so I used mayo.) I just try to keep the wet dry ratio intact.
