I cut my cheese fat intake by buying a block of very pungent Cabrales cheese that's flavorful enough to eat only a teaspoon's worth per sitting. Of course, I do need to follow through with the calcium-enriched OJ to compensate.

Good Trouble and Righteous Fights

Trying to make veggie products taste like meat will always fail because they're not made of meat. It'd be like making corn-on-the-cob out of ground pork.

The best veggie burger I've ever had is the black bean burger at 74th St Ale House, because it's not trying to taste like anything but a spicy bean cake, with cheese and salsa and some kind of dressed-up mayo. Yum.

A few years ago I had some fat-free cheese, and I decided there was no food on this planet more disgusting than that.

At least they attempt to add some kind of flavor to "cheese." The really disgusting stuff is fat-free cream cheese. It's wallpaper paste, with less flavor.
