Hot Rod Lincoln -- I'd pick Charlie Ryan, but there are a number of versions out there
Fast Car -- Tracy Chapman
One Piece at a Time -- Johnny Cash
Driver's Seat -- Sniff 'n' the Tears (a sadly underrated song)
Beep Beep -- Playmates
Dead Man's Curve (or Drag City) -- Jan and Dean

There are also a huge number of truck driver country songs, if you want to go that route:

Six Days on the Road -- Dave Dudley
Convoy -- C.W. McCall

Red Sovine may have been the king of the truck driver songs, but I'm not sure what to recommend. The sappy sentimentality of "Giddyup Go" puts it in the love-it-or-hate-it category. Ditto "Teddy Bear."
