Amy Liz, my Mom made the same "goulash".
I'm fairly sure it was one of those Woman's Day/Ladies Home Journal recipes at some point.
We also used to have (and I still make for the kids) "Sloppy Joes" from browned ground beef, onion and garlic, lots and lots of ketchup, a little sugar, and some chopped green pepper. Serve on hamburger rolls. Delicious. (But sloppy.)
When Julia was little, she couldn't say "American Chop Suey" so she accidentally renamed it "Mac Chewy" which cracks me up, so I often call it that, now.
Hee! That's a perfect name!
Last night the alumni director here fell end over teakettle down the stairs, during an alumni event, in an outfit that probably cost more than the Bluebook value of my car.
Ooooh. Ouch.
I just made turkey quesadillas for lunch. I shall submit them, as they are my own silly invention.

This picture makes me sad.
My dad eats lots of stuff that qualifies as starving student food.
Red beans and Rice: 2 cans red kidney beans, 1 can italian style chopped tomatoes. Simmer together. Serve over rice.
Noodles and Chicken and Peas: 1 pkg Lipton Noodles (the side dish kind, almost any flavor works) 1 small can chicken, 1 small can English peas. 1 small can mushrooms (my addtion, totally optional).
Cook noodles according to package, as the noodles start to thicken add chicken and peas (and mushrooms) continue to cook until heated through. Serve.
Rice (seriously he eats just rice)
2 cups water, 1 cup rice, salt. Put water in pan, add salt to water, bring to a boil. Pour in rice, reduce to low heat and simmer until done. check only occasionally -- do not stir rice!!-- if it looks like the water is gone, gently tip pan to see if any water runs out, if it does cook longer, if not eat.
Dad snacks:
Soup--- open can and eat.
Canned peas-- open can and eat
I hated sloppy joes because they were sweet. Ewwww.
My mom used to make a casserole that was a bastardization of Chicken Supreme (I think), that we called "Who Hash," in honor of the Grinch. It was (more or less) Chicken Supreme, in the white-ish sauce, with peas*, poured over either toast or biscuits (I disremember which), sprinkled with cheese on top, and baked.
*(It was the peas that made me refuse to eat it, because I had a vendetta against all vegetables that weren't corn or carrots. And even the carrots had to be raw, not cooked.)
Heh. I would only eat raw carrots or still-frozen peas. If they thawed they were no good.
Know what's crazy making?
Having nearly $4000 in your checking account that you can't touch.
At. All.
Heh - I was going to test Honey-Pecan Chicken for the cookbook tonight, but I didn't have enough butter. So we had chicken with mushroom soup.
Deena, thank you for putting the list together! It's not like you don't already have a lot of demands on your time.
