Timelies! Gotta thank the Nor'westers for the beautiful baby pictures, they're a lovely way to start the day. Susan, I wanted to capture that picture of Annabel, but your settings won't allow it. Bummed, now.

I have things I should do. Instead, I'm watching Trading Spaces and drinking coffee. Since I've worked the last three Saturdays and managed to at least keep up with dishes and laundry, I'm taking today for me. I might, after a few more cups of coffee, actually drag the vacuum out and do the first floor. I don't have the energy to drag the Kirby up the stairs to the loft, today. I think I might have to get something small and extremely portable to do the stairs and loft.

Hil, if I lived closer, I'd feed you soup. I made a huge pot of bean soup this week and still have lots left. Also, mexican spoon bread. Yum.

Unfortunately, Annabel decided to wake up at 2:00 a.m. and not go back to sleep for quite awhile. Nothing like all three of us being awake at 3:00 a.m., and her the only one happy about it! And I really meant to go to church this week. But not now. Too tired.

Nora, I used a combination of two different recipes, but this one is a good one. I left out the pimentos and onions this time because I wasn't sure my daughter would eat it if I put them in. She has food issues. Also, I just used canned diced green peppers, it's easier. It's basically corn bread, with some nummy additions.

Mexican Spoon Bread

Combine:
1/2 cup cooking oil
2 eggs, slightly beaten
1 can cream corn
1 cup yellow cornmeal
3/4 cup milk
1 tsp salt
1/4 tsp baking soda
1-1/2 cups grated cheese
1 can pimientos, finely chopped
1 grated onion
2 pods Jalapeno peppers, seeds removed and finely chopped

Pour into heavy baking dish. Bake 1 hour at 400F. Serve as a side dish like a dressing.
