I'm a little confused about this, still. Why couldn't you break your lease? It's pretty standard that there is some provision for this in most leases, though very often you'll incur a penalty.

How hard is it to find an apartment in AA - what's the likelihood that they wouldn't find a new tenant if you got a job elsewhere?

If the situation turns out to be that if you get a new job somewhere that's good enough to be worth moving for and you have to eat a month of rent to get out of your lease, that sounds okay.
Yeah, I mean, whatever they pay me, it's bound to be more (and, from what I could tell from the salaries for medical writers, close to twice) than what my graduate student stipend was. And if I get this first job, I'll have that goddamn experience everyone always wants.

This is asking for permission. Don't. If they're not funding you, and you're not looking for them to fund you, they don't get to have a say over this. They can offer suggestions, which you appreciate, because you know they come from love, but you're not obliged to follow their suggestions.
But I'm with beth. It's time to get a stupid job. Just something. If nothing else, it will be money you can use toward paying a mover, or paying that double rent.

uh...they can't force you to stay. I'd say it's time to research Tenant rights in your state.

And, really, even if it is true that they can make you pay for the whole lease, if the rental market in AA is so tight it seems like it would be no problem to get a subletter if the opportunity came to move before the lease was up.

OK, there's some bullshit going on somewhere. You need to see a copy of the actual lease. Landlords often say that a lease can't be broken, when they actually mean it can't be broken without penalty. And frankly, it's better for them if they lease to someone who won't break it, so they're going to make it sound as written in stone as they can. Read the lease - I'll bet there's something in there, like 30 or 60 day liablity, or full lease term liability
