I've never seen CI recommend any canned beef broth. (I've seen them use it once or twice combined with chicken and red wine vinegar, but never on its own.) So if they're saying "beef stock," they're probably assuming you've made your own according to their recipe. (Which presumably is in The Best Recipe, but I'm too lazy to go into the kitchen and check right now.)

What brand is good though? I gave up on buying chicken stocks, and really never gave beef stock any thought past Oxo (which isn't OXO).

ATK uses the Swanson low sodium for chicken broth. The reason they call for both beef and chicken in some recipes (just watched a program on French Onion Soup) is that most commercial beef broths suck. So when you would normally use beef broth, they use two parts chicken for each part beef to get a little of the flavor without the metallic icky taste from most beef broths.
