They used natural syrups at the coffee shop where I worked way back when. I had to tell quite a few people that an orange or lemon steamer might not be such a good idea. I could usually do a mocha with orange flavoring by putting the milk in after the espresso shots and chocolate, and using skim instead of whole, but those fruit-based syrups in milk drinks could be tricky.

For years I refused to drink OJ at the same meal as cereal. I know the acid curdles the crap out of the milk in my stomach, but I swore it was curdling in my mouth, and I couldn't bear it.

Do they have curdled milk product? Orange flavouring in milk products is ... weird, but whatever. Voluntarily drinking curdled milk -- just gross.

Hmm. I've seen a couple of recipies for orange julius, and they all involve oj and milk. Gross, I'm not denying, but SOMEBODY likes it.

The orange julius recipes I've seen have either ice cream and OJ or frozen OJ and milk. I assumed that the temperature prevented the curdling.

I have never (and I did use to play with it) mixed notable quantities of both at room (or fridge) temperature without curdling.
