I KNOW! I don't know what the deal is but canned green beans have been tasting so yummy to me lately. I fully realize that fresh and frozen taste much better, but there's just something about that mushy, overcooked canned thing. It's very strange, but I embrace my strangeness.

Heh. At one point I made the traditional Thanksgiving green bean casserole for Vortex's family. I'd been there a couple years before adn was SHOCKED they didn't eat it with Thanksgiving dinner. So I made it. And they were very skeptical. They tried it. And said "Wow, this isn't bad!". Turns out, they'd thought I would make it with canned green beans.

The only time I've had the green bean casserole, it was made with frozen green beans. They had a weird texture.

Good Trouble and Righteous Fights

Back from the game. M's lost, thanks to one bad inning by the starter and anemic offense all around. But Annabel was good, if squirmy, for a kid who skipped a nap. I think our strategy of trying insofar as possible just to live our lives, take her with us, and expect her to deal with it is paying off.

Sorry to have freaked out all over the thread this afternoon. I think I'm going to put a note up on my computer with a few questions like, "How's your blood sugar? Hormones? Are you sure you want to post this?"

ach... venting here is better than takeing it out on you, annabel or your DH - and we will ask you if you need food. or tell you what to do first , second, third. besides , we might think you were taken over by a pod person if all you posts were mellow, happy and calm.

for what it is worth, my sisters seem to have a built in radar to know when DH is away. Military sister called last night we talked from about 7 until 10 , my time. she is on the east coast. baby sister called tonight. and for some reason I had a couple of long conversations with DH tonight. What I'd like to know is how am I supposed to bead and watch al lthe movies I have floating around if everyone keeps calling me. I had a list of things to do for me. one of them was done. sigh...

Yes, they are pretty bad if you eat them warm. However, drain and dump them into a bowl, sprinkle a little vinaigrette over them, grate on a little parmesan, some coarsely ground black pepper, a few bacos if that's your pleasure, and you have a no-fuss meal that will fill you up and not cost you many calories.

It's the no-fuss that gets me, because if I have to damn peel or snap or tear or blanch anything I'm liable to not eat it. If I can eat it raw with one hand or dump it in a bowl and eat it cold or nuke it, I'm good.

DH stirfried coined young zuccini in a bit of olive oil with ground ginger, garlic powder, a dash of lime juice and a dash of lite soy, just till tender. I packed it in single-servings and nuke it to have along with a grilled beef pattie or chicken breast. Doing without potatoes, white rice and pasta isn't that hard. What's difficult is feeling "fed" without having to eat a ton of salad or steamed veg.

You can do a fast and dirty three-bean salad with a can of dark kidney beans, a can of chickpeas and a can of cut green beans. Drain each, toss together with your choice of vinaigrette and add olives or capers or whatever sort of extras you like. If I'm going to stick to a diet, it has to be easy.
