I've grown fond of Vag Rounded of late, but it probably looks too primary school for a document that's intended for adults.
McGill Sans Serif is always a good non-flashy workhorse font to fall back on. As is Futura.
Too late for Garamond, no matter how nice it is. Honestly, I'm half convinced somone else will change the font all over again later anyway. I changed it once (after having written most of the answers), and that's enough.

I'm fond of Universe condenced light. It's sans serif, fairly compact, but still readable.
