Shortbread is a cookie made of butter, flour and sugar. It's very "short," i.e., it has a high proportion of shortening to flour.
Hardtack is similar to matzos.

There's considerable debate about what short'nin' bread is. The name has been applied to shortbread, shortbread made with brown sugar, biscuits and a cake similar to gingerbread.
