While fighting valiantly to go to sleep last night, I caught an old CSI. The first one with Lady Heather. And who should be the wife of the guilty party but Kirsten from the OC. I swear, that show can take the six degrees in tv down to 2.

I need to clean. I need to do laundry. I need to grocery shop.

I have a sneaking suspicion I will do none of the above.

Cake flour is in boxes, not bags, which makes it harder to find. Look for a box about the size of a medium-sized box of Bisquick, brand name Softasilk.

Wow, I didn't know all that about wheat. As someone who has trouble with wheat gluten, this is very good information to have! Also, explains why I dislike bagels, and they dislike me.

Years ago I worked in a bakery. We only used organic flour - it varied quite a lot from week to week, so the person doing the bread dough mixing always had their hands full adjusting the recepies to compensate.

Well not canonically, no, but this is transformative fiction.

I did another scan of the shelves of my local Ralph's, and ... no cake flour. I have a couple days before I start baking, so I may just try going alternative and upscale shopping, and seeing if that works.

I just got back from krav. Assisted in one class, taught another (yay!), and took the third. A little tired. But I have chai teabags, and I think I will be doing a lot of lying around and watching more Twilight Zone.
