Microsoft Word can format Web and e-mail addresses as hyperlinks as you type, but you can turn off this feature if you want.
1. On the Tools menu, click AutoCorrect Options, and then click the AutoFormat As You Type tab.
2. Under Replace as you type, select or clear the Internet and network paths with hyperlinks check box.

Aha! Yeah, never would have found that on my own. ('Cause, underlining links != correcting anything. But whatever, it's off now.)

I'm pretty sure I'm going to spend the $60 and send them my iPod so they can turn it into a sparkly burgundy iPod, but I thought I'd check if anyone I actually know has worked with them.
Also, Jessica, you can right click on the URL and there should be an option for "remove hyperlink".
I HATE the way Word automatically makes them clickable links; it makes it very difficult to edit references to web pages.
