Remus and Sirius, romping around in the afterlife. Or hell, any sort of fix-it fic with Remus, Sirius, and/or Tonks. Those are the deaths I think I'm least satisfied with.
Kreacher's tale of what happened after Harry, Hermione, and Ron left Grimmauld Place.
I want to see George getting on with life without Fred.

Fred ghosting it up at Hogwarts.
And then moving on when George dies... rules, more like guidelines really

I'm not sure how Dudley or Petunia would have reacted to any magical offspring of Dudley. I'd like to think of Dudley's acknowledgement of Harry when he left the house as the beginning of a closer relationship between the two. At least at the level of exchaning Christmas cards each year. I doubt such a Dudley would have been scared or angry with a magical child. Maybe not thrilled, but not scared.
I doubt Petunia would react well. Vernon wouldn't react any better than he reacted to Harry -- he's so obviously cast as the Muggliest of Muggles.
I suspect their 7th year was studying for leaving exams
I think I misspoke when I said, "during 7th year." I was actually talking about two different stories. "7th year" = what happened at Hogwarts while Harry, Hermione, and Ron sought horcruxes. How did everyone react to Headmaster Snape (including Snape himself)? How did they deal with the Carrows?
Then, "the year after Voldemort was defeated" would involve the rebuilding of Hogwarts and wizarding society generally. How did the building get put back together? Who ended up in Azkaban, and what kind of Azkaban existed afterward? A lot of alumni came back to take part in the fight -- what happened to them? Did they stay on to help rebuild? What happened to Draco after Harry saved his life (twice) other than fathering Scorpius and losing his hair?
Another story I'd love to read is Snape's POV of 7th year.
