Lucas said the reason he made all the changes was because he finally had the resources to make the originals the way he would have if money and technology had been available back then.
My problem with that excuse is the changes that are completely unrelated to technological limitations. Such as Greedo firing first/at the same time.

I do like the masses of stormtroopers rather than just a few in that one Han Solo scene. I dream of having copies of both the original version and the special edition and editing them together to my own satisfaction. That would rule.
The worst thing I can say about Episode 1 is that I thought it was over after the chariot race because it seemed like a whole lot of time had passed since it started at that point. I think I might own it on VHS, so I can't hate it that much.

The cantina scene is expanded. In the '97 release Lucas added some CG performers to the alien band, including at least one female singer/dancer. In addition, the blood has been erased from the moment when Obi-Wan cuts the lowlife's arm off (it having since become canon that lightsabers cauterize wounds).

You're thinking of the scene in Jabba's palace in Jedi. There's no singing or dancing in the Cantina, just the band playing.
In addition, the blood has been erased from the moment when Obi-Wan cuts the lowlife's arm off (it having since become canon that lightsabers cauterize wounds).
The arm looked pretty bloody when I watched my DVD the other day. Though it's possible Lucas changed things back for whatever reason.

He digitally put Hayden in instead of "unknown actor" who was unmasked and ghost Annakin in Jedi. Why Annakin gets to be young again, but Obi-Wan doesn't get the Ewan treatment is.....well, who's a more classic actor I guess.

Yeah, that's what I was scratching my head about too. Just to clarify the original "unknown actor" is still mask-less Vader, though sans eyebrows. (Not implying you thought that wasn't the case, but your post could have been read either way.)
